Extra-virgin olive oil | 45 grams |
Toasted sesame oil | 15 grams |
Ume plum vinegar | 40 grams |
Tamari | 30 grams |
Agave syrup | 15 grams |
Smoked paprika | 30 grams |
Scallions, thinly sliced | 250 grams |
Black sesame seeds | 35 grams |
METHOD:
Thaw tuna in the refrigerator overnight.
Prepare a sauce by whisking together the gochujang, olive oil, sesame oil, vinegar, paprika, tamari and agave.
Pour sauce over tuna and mix well to combine and coat tuna.
Gently fold in scallions and sesame seeds.
