Lemon zest | 25 grams |
Lemon juice | 35 grams |
Plant-based mayonnaise | 375 grams |
Non-pareil capers, drained | 155 grams |
Dijon mustard | 50 grams |
Horseradish, drained | 80 grams |
Fresh flat-leaf parsley, chiffonaded | 35 grams |
Fresh dill, chiffonaded | 40 grams |
Celery, small dice | 325 grams |
Scallions, thinly sliced | 150 grams |
METHOD:
Thaw tuna in the refrigerator overnight.
In a large bowl, gently toss together tuna with olive oil, salt, pepper, lemon juice and lemon zest.
In a separate bowl, whisk together mayonnaise, mustard, capers, horseradish, parsley and dill. Pour dressing over tuna.
Gently fold in celery and scallions.
Taste and re-season if desired.
